French toast has always been one of the top breakfast/brunch favorites. Here’s our take on this fave that can be hand held and will be the new go-to.

Ingredients

Base

  • 1/4 cup heavy whipping cream

  • 1 cup almond milk

  • 4 eggs

  • 2 tsp vanilla

  • 3/4 tsp cinnamon

  • 2 tbsp granulated sugar

  • 6 cups cubed bread (broiche, honey wheat, whatever takes your fancy)

Topping

  • 1/4 cup butter

  • 1/4 cup brown sugar

  • 1/3 cup flour

  • 1/2 tsp cinnamon

Directions

  1. Preheat over to 350. Prepare 12 cup muffin/cupcake pan with coconut oil or cooking spray.

  2. Whisk together the milk, sugar, cream, eggs, vanilla, and cinnamon in a large bowl.

  3. Mix the cubed bread into the mix and gently toss to coat all the bread.

  4. In a separate bowl, mix the topping by adding the butter, flour, brown sugar, and cinnamon.

  5. Using a fork or pastry blender, break the butter in the mixture into small clumps.

  6. Sprinkle the streusel mix over the top of the muffins.

  7. Bake in over for 25-30 minutes until golden brown on top.

  8. Allow to cool and serve.
