(Lara-like) Cashew Balls

Who doesn't love the simplicity of Larabars? Real foods and no extra hidden ingredients! Personally, I fell in love with the cashew cookie flavor and was floored when I saw it was two ingredients: dates and cashews. At that point I knew I had to try my hand at my own.

Whats in ‘em?  

- 1 1/2 cup unsalted cashews  

- 3/4 pound of pitted dates

- 1/2 tsp vanilla

- 1 tsp chia seeds  

 

How do you make ‘em?

In a food processor (I used my nutribullet), blend cashews until desired consistency (from chunky to near powder, your choice!). If your processor is large enough, add dates in slowly and add vanilla. If not, dump the cashews in a separate bowl and blend the dates (make sure no pits are left) and vanilla in the processor. When done, combine by hand (like playing with PlayDoh); mix until even throughout. Now comes some decision making, you can combine the chia seeds in or sprinkle them on top the balls after they’re rolled. Choose wisely (they both taste yummy don’t worry). Hand roll or use a cookie scoop to make into ball shapes. Refrigerate for at least 20 minutes. I leave mine in over night. 

Yields: 18 balls  

 

Notes 

as far as the dates, I chose to use 3/4 of a pound but if you’d like any amount more would work if you want to make more servings. the vanilla can be omitted, but I love vanilla and I may be a little heavy handed when I add it to recipes (so more than the recipe calls for tastes just fine).  

maybe try some dry cherries or coconut flakes.
