Guilt-free Chocolate Chip Cookies

This recipe has SAVED me from snacking on sugar for the past week! Not only is it as satisfying as a fresh baked cookie but the ingredients are so much more simple than I anticipated. At 2g of carbs per cookie this recipe has changed my sweet tooth for good! The coconut oil along with the almond flour gives these cookies a nice and nutty aftertaste with just a hint of sugar-replacement (even honey works if you’d rather substitute some real sugar in exchange for a higher carb-count). The darker the chocolate chips/chunks are, the lower you’ll keep your carb count and once combined with the dough, all you taste is nutty-chocolate sweetness! We hope you enjoy!

  • 3 cups of Almond Flour

  • ¾ cup of coconut oil

  • 1 stick of butter

  • 2 eggs

  • 2 tsp of vanilla

  • ½ tsp of salt

  • ½ cup of Stevia (OR ¾ cup of truvia, OR ½ cup of honey for higher carb yet real sugar)

  • 1 ¼ cup of dark chocolate chips/chunks of your choice (the darker, the lower carb count)

Bake at… 350 degrees for 8 minutes (high altitude add 2 tbsps of almond flour) makes about 24 cookies
